Making a Doggie Cake

So since my dogs are very prominent in my life and they want to be included in everything I do (e.g. walking, sitting, eating, breathing, etc.), I figured I could use my cooking skills to make them something that would be good for them as well as tasty. Peanut butter sounded like the best option since they love it and I bet they may prefer eating it in cake form versus licking it off their nose. :) I found a website that listed a few different cakes and I plan on trying this recipe:


Peanut Butter Delight Doggie Cake

1 cup white or whole wheat flour
1 tsp baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots
1 tsp vanilla
1/3 cup honey
1 egg

Directions:

Preheat oven to 350°F (180°C)

Mix together flour and baking soda. Add remaining ingredients and mix well. Pour into a ring mold sprayed with a nonstick spray for 40 minutes.

Frost this cake with Cinnamon Frosting and Store in the Refrigerator.


Cinnamon Frosting

Combine the following ingredients and blend thoroughly:

12 ounces nonfat cream cheese (room temperature)
3 tsp cinnamon
1 tsp vanilla
1 tsp honey

Something bland? Cheez-it!

James is ridiculously fond of Cheez-its so I decided to see if I could find any recipes that would taste great if I substituted breadcrumbs for Cheez-its. I'm not adventurous enough to attempt to add them to a dessert but I figured this chicken recipe might be worth a shot.

Cheez-It Fried Chicken 
Ingredients
2 1/2-3 lbs fryer chickens, cut up
1 1/2 cups sunshine Cheez-It crackers, crushed to fine crumbs
1 teaspoon salt
1/4 teaspoon oregano
1/4 teaspoon celery salt or garlic salt
1 egg, beaten
1/4 cup milk
1/2 cup shortening

Directions
1. Clean, wash, and dry chicken.
2. In shallow pan, combine Cheez-It® Cracker crumbs with salt, oregano, and celery salt.
3. Roll pieces of chicken in crumbs until well coated.
4. Dip chicken in mixture of egg and milk.
5. Roll again in remaining crumbs until well coated.
6. In a large fry pan, brown chicken a few pieces at a time, in shortening.
7. When all pieces are browned, arrange back in fry pan.
8. Cover and cook over low heat until tender, about 30 minutes.

And although I am not a big fan of using a fryer, this could be great baked as well.

First Topic to Start out- Cake Crumbs

What do you do with Cake Crumbs after leveling off cakes? I usually toss them, but maybe there's a creative way to put them to use that would make something equally delicious. I'm gonna scour online to see what sort of delicacies I can find that can utilize this ingredients

These two look interesting:

Chocolate Angel Food Dessert
12 oz. Chocolate chips, 4 egg yolks, beaten, pinch of salt, 1 tsp. vanilla, 4 egg whites, 2 Tbs.. sugar,

1 pint whipped cream, 1 c. chopped nuts, 7-8 c. white cake crumbs, whipped cream

Melt chocolate chips in top of a double boiler over simmering water (do not let water boil).
Slowly add beaten egg yolks to chocolate and stir well. Add salt and vanilla. Remove from heat.
Beat egg whites until stiff: add sugar and fold into chocolate mixture. Fold in whipped cream and nuts: set aside.
Line bottom of 9" x 13" pan with cake crumbs. Save half of crumbs for the second layer. Pour 1/2 chocolate mixture over cake crumbs, cover with remaining crumbs, and pour remaining chocolate over top. Chill six hours or longer. Top with whipped cream. Makes 12-16 servings.



Coffee Cream Cake
8 c. white cake pieces, 1 pkg. vanilla pudding, 1 Tbs.. instant coffee granules, 1 1/2 c. milk, 1 pt. whipping cream, 1/4 c. sugar, 1 tsp. vanilla, 1/4 c. chopped nuts

Place cake pieces in 9" x12" pan. Cook pudding as directed except add coffee granules and use only 1 1/2 C. milk: cool. Whip cream until stiff. Add sugar and vanilla. Beat pudding smooth and fold in about 2/3 of whipped cream and spread over cake. Top with remaining whipped cream. Sprinkle with nuts. Refrigerate.

I figured since I receives requests regularly for recipes, pictures, cooking troubleshooting, etc that I should just combine information in one place and instead of answering the same questions a few times in a row, to be able to say: "It's online, enjoy!"

Usually I prefer baking over regular everyday cooking since I am super picky (don't like tomato, onion bits, mushroom, etc.) but I have been working on improving in that area and it turns out I'm not too bad of a Chef either! :)
